The importance of vegetables in our meals by Chef Olanike Shodunke

The important of vegetables and fruits can not be over emphasized,to mention but few:

1.Bell pepper
antioxidants trusted source which reign supreme when it comes to anti-aging. In addition to their high content of vitamin C — which is good for collagen production — red bell peppers contain powerful antioxidants called carotenoids, it contains 100percent daily vitamin C. Bell peppers are fruits of plants and they come in different colors and sizes. Could be enjoyed cooked or raw

Slice bell peppers and dip them in mayonnaise as a snack, add them into raw salad, or cook them up in a stir-fry.

2.Waterleaf
Repairs body tissues
They are a good source of vitamins such as A and C which helps to repair the body tissues and promote good eye vision.
One of the main functions of vitamin C is to help in the normal body tissues repair and growth, it acts as an antioxidant as it prevents oxidative stress which is caused by free radicals from damaging the body cells and tissues. This can be found mainly in west Afirca and some other countries. 

It makes the skin smoother and prevent dryness, as well as helps in the formation and improvement of the skin pigment. 

It could be cooked with other vegetables like scent leave, this combo helps with easy conception.
